PRO TIP:Instead of mixing the greens with the olive oil, lemon juice, salt and pepper, I like to massage them. It helps tenderize them and changes the texture. A lot of restaurants use this technique when making their salads. This is why a salad can sometimes taste better at a restaurant than at home.
