Chicken Tacos on White

Ingredients

  • 10-12 White flour tortillas (get the small size for fajitas)
  • 4 c Shredded chicken (one whole chicken)
  • 2 c Shredded hedder cheese
  • 3 c Avocado oil for frying

Instructions

  • Heat oil in a shallow pan on medium high
  • Wrap the tortillas in 2-3 paper towels and place in the microwave for 1 minute.
  • Remove tortillas from microwave and one at a time begin to fill by placing 1/4 c of chicken in each and 1tbsp of cheese.
  • Fold taco in half and close the edges by securing with two toothpicks. 
  • Carefully place tacos in oil and cook on each side until golden brown and crisp, about 1-2 minutes per side. Continue to cook in batches of four until done.
  • Remove from oil and place on a wire rack on top of a sheet pan lined with a paper towel where the excess oil can drain.
  • Let cool and remove toothpicks and fill with your favorite toppings!
  • Enjoy!

Notes

To make Whole 30 sub the white tortilla for a siete tortilla and skip the cheese!
