10-12White flour tortillas (get the small size for fajitas)
4cShredded chicken (one whole chicken)
2cShredded hedder cheese
3cAvocado oil for frying
Instructions
Heat oil in a shallow pan on medium high
Wrap the tortillas in 2-3 paper towels and place in the microwave for 1 minute.
Remove tortillas from microwave and one at a time begin to fill by placing 1/4 c of chicken in each and 1tbsp of cheese.
Fold taco in half and close the edges by securing with two toothpicks.
Carefully place tacos in oil and cook on each side until golden brown and crisp, about 1-2 minutes per side. Continue to cook in batches of four until done.
Remove from oil and place on a wire rack on top of a sheet pan lined with a paper towel where the excess oil can drain.
Let cool and remove toothpicks and fill with your favorite toppings!
