I’ll admit I was late to the arugula train, I just couldn’t get around that spicy bite. And then something amazing happened, I tried adding acid to cut through said spiciness and voila, I was in heaven.

This salad is as straight forward and easy as they come. Just stick to the base of arugula, olive oil, lemon, and salt and add in whatever sounds appealing to you that day. Don’t be afraid to skimp on the lemon juice either. 

If I don’t have chicken I use deli turkey, which comes in handy when we’re traveling. I usually run to the store and grab items to make sandwiches for lunches on the go. Instead of a sandwich I like to pack myself this salad. It holds well and has everything I need to refuel and replenish my body. I hope you like it as much as I do too!

My Go-To Arugula Salad

Ingredients

  • 2 c. arugula
  • 1 tbsp. lemon juice usually half a lemon
  • 1 tbsp extra virgin olive oil or olive oil cooking spray
  • 1/2 c. grilled chicken
  • 1/2 avocado sliced
  • 1/4 c. shredded carrot
  • 1/4 c. pickled onions
  • 1 tbsp. sliced almonds
  • salt and pepper to taste

Instructions

  • Place arugula in a bowl
  • Drizzle with olive oil, lemon juice, salt and pepper.
  • Mix well
  • Top with remaining ingredients
  • ENJOY!

Notes

PRO TIP:
Instead of mixing the greens with the olive oil, lemon juice, salt and pepper, I like to massage them. It helps tenderize them and changes the texture. A lot of restaurants use this technique when making their salads. This is why a salad can sometimes taste better at a restaurant than at home.
